    Consumer behavior and market trends underscore a substantial surge in chicken sales industry-wide, predominantly propelled by younger generations. This shift is reflective of an evolved consumer preference gravitating towards healthier, non-processed meat options and mindful eating. Contemporary consumers, with their heightened awareness and increasing concerns regarding processed deli meats, are consciously seeking cleaner, minimally processed alternatives like chicken breast.

    The national launch of the Chicken will be a first of its kind at this scale from the brand. The uniqueness of this product quality should drive in consumers who may have been hesitant to try us in the past due to quality misperceptions about our proteins.

    Moving to a single size cookie gives customers a focused offering and more importantly, simplifies the supply chain, in-store baking operations, labeling and allows for one piece of packaging that actually fits the product.

  • Chicken Breast will be available on our menu starting January 6, 2025. Chicken will be launched as an Limited Time Only but could become permanent depending on sales and customer feedback.

  • Each store will receive menu board magnets and playsheets specific to the Chicken Breast launch.

  • The Chicken Breast will be promoted through TV commercials, digital advertising, and MyMike’s channels, with special features on in-store catering menus.

  • Yes, specific POS buttons will be implemented for each Chicken Breast item to streamline order processing.

  • Recommended corporate pricing will be as follows for both builds:
    • Spicy Chicken Italian: Regular $9.95 / Giant $17.95
    • Chicken Breast Fresh: Regular $9.55 / Giant $17.65

    If you wish to change from Corporate recommended pricing, you will need to make your changes to in the price portal.

  • The Chicken Breast arrives in frozen pouches of 4.4 Lb / 7 pouches per case. Remove pouches from the case and thaw for at least 48 hours in the refrigerator before use. Open pouch and discard purge. The breast comes fully sliced and hinged by the side, around 12 regular portions come out of each pouch.

  • Once thawed and opened, the Chicken Breast should be used within 36 hours. The shelf life refrigerated and unopened is 6 days.

  • For hot builds pre portion the chicken breast. A scale is required to ensure the correct portion size 5.3oz, and minimize any impact in the speed of service during rush hour. There is not set number of slices per portion, weigh the 5.3 oz of chicken and wrap in deli sheet (like Portabella).

    For cold subs, place chicken breasts in a 2.5” deep tray with a strainer in the bottom. Place tray into the top level of the meat case until ready to use. When building a cold chicken breast sub, serve directly from the pan. Closely shingle the chicken slices in one even layer, ensuring full coverage of sub bread. weigh in the morning to visually calibrate 5.3 oz of chicken.

  • 5.3 oz ensures a yield of 4.2 oz after cooking, accounting for the natural reduction during grilling.

  • For Sub Bowls, the standard recipe is with cold chicken breast. If a customer wants grilled chicken, sear the chicken breast and chop on the grill in small bite-size pieces before putting it in the bowl to ensure consistency with new sub bowl ops.

  • Additions include Provolone Cheese, Pepperoni and Hot Chopped Pepper Relish, enhancing our flavor offerings.
