We recommend that the dough cutter (chopper) be kept as close as possible to the scaper in the trough. Many sandwich lines have a secondary side car to the trough that is perfect for holding the chopper. You can also keep it in a 1/6 pan or in the backup trough if there is open space on the line behind you.

Yes, the deli paper provides an additional barrier for food safety. We also want to keep that sprinkling board clean and without cutting marks. Deli paper will be needed whenever veggies are being chopped.
